Analysis of the colorimetric characterization of orange juices by spectrophotometry

Abstract

In this work, we evaluate the color of the juice from different varieties of oranges, including Tangelo, Valencia, and Huando, available at several markets in Lima, Peru. Color can be evaluated by visual appearance or by instrumental analysis, and in this study, we used different types of spectrophotometers. The measurements are reported based on colorimetric coordinates L*a*b∗ and L*c*h*. In addition, we analyzed color difference (ΔE) between orange varieties and commercially produced juice, and the color data were analyzed for significance using Tukey's test.
